Caesar salad

Caesar salad is my favorite summer salad. It all comes down to the dressing, nicely punchy, and to homemade croutons, far better than store-bought ones.

Ingredients

For the dressing

Method

  1. Cut the bread into cubes and fry them in a pan with the 2 tablespoons of oil for 4 to 5 minutes, stirring often, until golden. Drain the croutons on paper towels.
  2. For the dressing, put the egg, the peeled garlic, the mustard, the capers, the lemon juice and the Tabasco in a blender bowl. Blend for a few seconds.
  3. With the blender still running, pour in the oil in a thin stream: the dressing thickens like a light mayonnaise.
  4. Add the grated parmesan, blend for a moment more, then season with salt and pepper. Taste and add a little more lemon if needed.
  5. Wash the lettuce leaves and dry them carefully, then cut the largest ones in half.
  6. Just before serving, toss the salad with the dressing, add the croutons and scatter over the parmesan shavings.
