Sausages with lentils

The school-canteen dish I love making again at home: just one pot, simple ingredients, and everyone goes back for seconds.

Ingredients

4 people

Method

  1. Prick the sausages with a fork so they don't burst while cooking.
  2. Put them in a casserole dish with 1.5 l of cold water, the bouquet garni and the carrot cut into rounds. Bring to the boil and cook for 15 to 20 minutes at a rolling boil.
  3. Meanwhile, fry the lardons in a dry frying pan, just until lightly golden and crisp. Slice the onion.
  4. Rinse the lentils and add them to the pot with the onion and lardons. Lower the heat and simmer for 25 minutes, until the lentils are tender but still whole.
  5. Remove the bouquet garni. Pour off some of the liquid if there's too much left: the lentils should be just coated. Add pepper, taste before adding salt (the lardons and sausages are already salty) and serve piping hot.
