Light chocolate mousse

The chocolate mousse of my childhood, with no cream or butter: just good chocolate, eggs and a little patience.

Ingredients

6 people

Method

  1. Melt the chocolate in a bain-marie over very low heat, then let it cool for a few minutes until just warm.
  2. Separate the whites from the yolks. Stir the yolks into the warm chocolate one at a time, mixing well after each.
  3. Whisk the egg whites with the pinch of salt. Once they turn foamy, sprinkle in the sugar and keep whisking until stiff and glossy.
  4. Briskly whisk a third of the whites into the chocolate to loosen the mixture.
  5. Fold in the rest of the whites gently with a spatula, lifting the mixture from the bottom up, until there are no white streaks left.
  6. Spoon into glasses and let set in the fridge for at least 4 hours, ideally overnight.

Where does this recipe come from?

France

A great classic of French desserts, found in Paris bistros as much as in family kitchens.
